Mini Pancake Sausage Bites are a delightful combination of fluffy pancakes and savory sausage, perfect for breakfast, brunch, or as a grab-and-go snack. These bite-sized treats are easy to make and loved by all ages.

Instructions

  1. Prepare the Sausages:
    • Cook the sausage links according to the package instructions until browned and cooked through.
    • Allow them to cool slightly, then cut each link into 3 equal pieces.
  2. Make the Pancake Batter:
    • In a medium bowl, whisk together the flour, sugar, baking soda, salt, and baking powder.
    • In a separate bowl, whisk the egg and buttermilk until well combined.
    • Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter should be slightly lumpy; avoid overmixing.
  3. Heat the Oil:
    • In a deep skillet or saucepan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer for accuracy.
  4. Coat the Sausages:
    • Using a fork or skewer, dip each sausage piece into the pancake batter, ensuring it is fully coated.
  5. Fry the Sausage Bites:
    • Carefully place a few batter-coated sausage pieces into the hot oil at a time.
    • Fry for 2–3 minutes, turning occasionally, until golden brown and crispy.
    • Use a slotted spoon to transfer the cooked bites to a plate lined with paper towels to drain excess oil.
  6. Serve:
    • If desired, dust the bites with powdered sugar and serve with maple syrup for dipping.
