  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mayonnaise
  • 1 cup bacon, cooked and crumbled
  • 1/2 cup onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup green onions, thinly sliced (for garnish)

Instructions

  • Preheat Oven: Set to 325°F (165°C).
  • Combine Ingredients: In a large bowl, mix diced potatoes, shredded cheddar cheese, crumbled bacon, and chopped onion. Sprinkle in garlic powder, salt, and pepper. Add mayonnaise and stir until all ingredients are well coated.
  • Transfer to Baking Dish: Spread the mixture evenly in a greased 9×13-inch baking dish.
  • Bake: Cover with foil and bake for 1 hour. Remove the foil and continue baking for an additional 30 minutes, or until the potatoes are tender and the top is golden brown.
  • Garnish and Serve: Once done, remove from the oven and let it cool for 5-10 minutes. Garnish with sliced green onions before serving.
