For the Noodles and Beef:

  • 8 oz noodles (spaghetti, udon, or lo mein)
  • 1 lb ground beef (lean)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 cup carrots, julienned
  • ½ cup green onions, chopped (reserve some for garnish)
  • 2 tbsp vegetable oil

Optional Garnishes:

  • Sesame seeds
  • Additional green onions

Instructions

  • Cook the Noodles: Boil the noodles according to package instructions until al dente. Drain and set aside.
  • Prepare the Sauce: In a small bowl, whisk together soy sauce, brown sugar, water, sesame oil, hoisin sauce, and cornstarch until smooth. Set aside.
  • Cook the Ground Beef: Heat vegetable oil in a large skillet or wok over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and cooked through. Drain any excess grease.
  • Add Aromatics and Vegetables: Stir in garlic, ginger, and carrots. Sauté for 2–3 minutes until fragrant and the carrots are slightly softened.
  • Combine Sauce and Beef: Pour the prepared sauce into the skillet with the beef mixture. Stir and cook for 2–3 minutes, until the sauce thickens slightly.
  • Add Noodles: Toss the cooked noodles into the skillet, ensuring they are evenly coated with the sauce. Stir in chopped green onions.
  • Serve: Garnish with sesame seeds and additional green onions if desired. Serve hot and enjoy!
