  • 1 (26-32 oz) package frozen hash browns
  • 1 lb ground breakfast sausage (or diced ham, bacon, or a mix)
  • 1 cup diced onion
  • 1 cup diced bell peppers (optional)
  • 12 large eggs
  • 1 cup milk (or heavy cream)
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Cooking spray or butter (for greasing the slow cooker)

Instructions

  1. Prepare the Crock Pot:
    Spray the inside of your crock pot with cooking spray or grease it with butter to prevent sticking.
  2. Cook the Sausage:
    In a skillet over medium heat, cook the sausage until browned. If using bacon, cook until crisp. Remove and drain on paper towels.
  3. Layer the Ingredients:
    • Spread half of the hash browns on the bottom of the crock pot.
    • Add a layer of half the cooked sausage, onions, and bell peppers (if using).
    • Sprinkle with 1 cup of cheese.
    • Repeat the layers with the remaining hash browns, sausage, veggies, and cheese.
  4. Mix the Eggs:
    In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
  5. Pour and Cook:
    Pour the egg mixture evenly over the layers in the crock pot.
    Cover with the lid and cook on low for 6-8 hours, or until the eggs are fully set and cooked through.
  6. Serve:
    Once cooked, turn off the crock pot, let it cool slightly, and serve warm. Garnish with additional cheese, green onions, or salsa if desired.
