    • ½ cup (120ml) heavy cream
    • 1 tsp vanilla extract
    • Pinch of salt

    • ¼ cup (20g) unsweetened cocoa powder
    • ¼ cup (30g) finely chopped nuts (e.g., almonds, hazelnuts, or pistachios)
    • ¼ cup (25g) sprinkles or shredded coconut

Instructions

  1. Make the truffle mixture:
    • Place the chocolate chips in a heatproof bowl.
    • Heat the heavy cream in a small saucepan over medium heat until it just starts to simmer (do not boil).
    • Pour the hot cream over the chocolate chips and let sit for 2-3 minutes.
    • Stir until the mixture is smooth and glossy. Add vanilla extract and a pinch of salt. Mix well.
  2. Chill the mixture:
    • Cover the bowl and refrigerate for about 1-2 hours, or until the chocolate mixture is firm enough to scoop.
  3. Shape the truffles:
    • Use a spoon or small cookie scoop to form tablespoon-sized portions of the chilled chocolate.
    • Roll each portion between your hands to form a ball.
  4. Coat the truffles:
    • Roll the truffles in your chosen coatings (cocoa powder, nuts, sprinkles, or coconut) until evenly covered.
    • Place the finished truffles on a parchment-lined baking sheet.
  5. Chill and serve:
    • Refrigerate the truffles for 20-30 minutes to firm up before serving.
