These No Bake Chocolate Oat Bars are the perfect combination of rich chocolate and chewy oats, making for a quick and easy dessert or snack. With no oven required, they’re a great treat for warm days or when you need a sweet fix in a hurry!

  • Base Layer:
    • 2 cups old-fashioned oats
    • 1 cup unsalted butter
    • 1/2 cup brown sugar, packed
    • 1 teaspoon vanilla extract
  • Chocolate Layer:
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup creamy peanut butter

Instructions

  1. Prepare the Oat Layer:
    • In a medium saucepan, melt the butter over medium heat. Add the brown sugar and vanilla extract, stirring until the sugar is dissolved.
    • Mix in the oats and cook for 2–3 minutes, stirring continuously. Remove from heat.
    • Press half of the oat mixture into the bottom of a greased or parchment-lined 8×8-inch baking dish. Set the remaining oat mixture aside.
  2. Make the Chocolate Layer:
    • In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  3. Assemble the Bars:
    • Pour the melted chocolate mixture over the pressed oat layer in the baking dish, spreading it evenly.
    • Crumble the remaining oat mixture over the chocolate layer and press gently to create an even top layer.
  4. Chill and Serve:
    • Refrigerate for at least 2 hours or until firm.
    • Slice into bars and enjoy!

Notes

  • For a nut-free version, substitute peanut butter with sunflower seed butter.
  • You can add a pinch of sea salt to the chocolate layer for extra flavor.
  • Store bars in an airtight container in the refrigerator for up to 1 week.
