No-Bake Thin Mint Cookie Truffles are a delightful treat that combines the classic flavors of mint and chocolate. These truffles are easy to make and perfect for any occasion.

  • 1 package (9 ounces) Girl Scout Thin Mint Cookies or Keebler Grasshopper cookies
  • 4 ounces cream cheese, softened
  • 12 ounces green mint chips or white chocolate chips
  • Optional: Green food coloring (if using white chocolate)
  • Optional: Crushed cookie crumbs or sprinkles for garnish

Instructions

  1. Prepare the Cookie Mixture:
    • In a food processor, blend the Thin Mint cookies until they become fine crumbs.
    • In a large mixing bowl, combine the cookie crumbs with the softened cream cheese. Mix until well combined and a dough forms.
  2. Form the Truffles:
    • Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment or wax paper.
    • Refrigerate the truffle balls for about 30 minutes to firm up.
  3. Coat the Truffles:
    • In a microwave-safe bowl, melt the green mint chips or white chocolate chips in 30-second increments, stirring after each, until smooth. If using white chocolate and desired, add a few drops of green food coloring to achieve a minty green hue.
    • Using two forks, dip each truffle ball into the melted chocolate, ensuring it’s fully coated. Allow any excess chocolate to drip off before placing the truffle back onto the parchment-lined sheet.
  4. Garnish and Set:
    • While the coating is still wet, sprinkle crushed cookie crumbs or decorative sprinkles on top for garnish, if desired.
    • Refrigerate the truffles for a few minutes until the chocolate coating sets.

  • These truffles can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a decorative touch, drizzle melted white chocolate over the top of the truffles after the initial coating has set.
