This no-bake dessert features layers of ladyfingers dipped in coffee, enveloped in a creamy vanilla mascarpone filling, and rolled into a delectable log. It’s an impressive treat that’s easy to prepare and perfect for any occasion.

  • For the Filling:
    • 1 cup (240 ml) heavy cream
    • 1 cup (240 ml) milk
    • 1 package (2.6 oz/74 g) vanilla instant pudding mix
    • 1 cup (240 g) mascarpone cheese, softened
    • 1/2 cup (100 g) granulated sugar
    • 1 teaspoon vanilla extract
  • For Assembly:
    • 22 ladyfingers
    • 1/2 cup (120 ml) strong brewed coffee, cooled
    • 1/4 cup (60 ml) coffee liqueur (optional)
  • For Garnish:
    • Unsweetened cocoa powder, for dusting
    • Fresh berries (such as raspberries and blueberries)
    • Mint leaves
    • Powdered sugar, for dusting

Instructions

  1. Prepare the Filling:
    • In a large mixing bowl, combine the heavy cream, milk, and vanilla instant pudding mix. Whisk until the mixture begins to thicken.
    • Add the softened mascarpone cheese, granulated sugar, and vanilla extract. Continue to whisk until smooth and creamy. Set aside.
  2. Assemble the Ladyfingers:
    • In a shallow dish, combine the cooled coffee and coffee liqueur (if using).
    • Quickly dip each ladyfinger into the coffee mixture, ensuring they’re moistened but not soggy.
    • On a piece of plastic wrap or foil, arrange the dipped ladyfingers in two rows of eleven, forming a rectangle.
  3. Add the Filling and Roll:
    • Spread the vanilla mascarpone filling evenly over the arranged ladyfingers, leaving a small border around the edges.
    • If desired, place a line of fresh berries along one of the long edges.
    • Using the plastic wrap or foil to assist, gently roll the ladyfingers and filling into a tight log, starting from the edge with the berries.
    • Wrap the roll tightly in the plastic wrap or foil and refrigerate for at least 2 hours, or until set.
  4. Serve:
    • Unwrap the tiramisu roll and place it on a serving platter.
    • Dust the top with unsweetened cocoa powder.
    • Garnish with additional fresh berries, mint leaves, and a light dusting of powdered sugar.
    • Slice and enjoy!

  • For a non-coffee version, dip the ladyfingers in warm milk or a mixture of milk and vanilla extract.
