  • 6 large croissants, torn into chunks
  • 1 lb (450g) breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 2 green onions, thinly sliced (optional garnish)

Instructions

  1. Grease a 9×13-inch baking dish and place the torn croissant pieces evenly across the bottom.
  2. Sprinkle the cooked sausage evenly over the croissants, followed by the cheddar and mozzarella cheeses.
  3. In a large mixing bowl, whisk together the eggs, milk, heavy cream, salt, pepper, garlic powder, onion powder, and smoked paprika.
  4. Pour the egg mixture evenly over the croissant and sausage layers, pressing down gently to ensure all pieces are soaked.
  5. Cover the dish with plastic wrap or aluminum foil and refrigerate overnight (at least 6 hours).
  6. Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for 20–30 minutes.
  7. Bake uncovered for 40–45 minutes, or until the casserole is golden brown and set in the center.
  8. Allow the casserole to cool for 5–10 minutes before slicing. Garnish with green onions, if desired, and serve warm.
