  • 2 tablespoons milk

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with cooking spray.
  2. Prepare the Batter:
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
    • Spread half of the batter evenly into the prepared baking pan.
  3. Prepare the Cheesecake Layer:
    • In a medium bowl, beat the softened cream cheese and 1/2 cup granulated sugar until smooth.
    • Add the vanilla extract and egg, and continue beating until fully combined.
    • Spread the cheesecake mixture evenly over the batter in the pan.
  4. Add Peach Filling:
    • Evenly distribute the peach pie filling over the cheesecake layer.
    • Drop spoonfuls of the remaining batter over the peach layer. It’s okay if the batter doesn’t completely cover the peaches; it will spread as it bakes.
  5. Bake: Bake in the preheated oven for 30 to 35 minutes, or until the top is light golden brown. Remove from the oven and allow the bars to cool completely in the pan.
  6. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and almond extract until smooth.
    • Once the bars have cooled, drizzle the glaze over the top.
