  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red, yellow, or green)
  • 1 cup long-grain white rice
  • 1 ½ cups chicken broth
  • 1 (8 oz) can pineapple chunks, drained (reserve juice)
  • 2 tablespoons soy sauce
  • 2 tablespoons pineapple juice (from the can)
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • ½ teaspoon chili flakes (optional, for heat)
  • Salt and black pepper, to taste
  • 2 green onions, sliced, for garnish
  • Fresh cilantro (optional), for garnish

Instructions

  1. Cook the chicken: Heat olive oil in a large skillet or deep pan over medium heat. Season the chicken pieces with salt and pepper, then cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the pan and set aside.
  2. Sauté aromatics: In the same pan, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  3. Toast the rice: Add the rice to the pan and stir well to coat it in the oil and aromatics. Toast for 1-2 minutes.
  4. Simmer the dish: Add the chicken broth, soy sauce, pineapple juice, honey, and chili flakes (if using). Stir to combine, then bring to a simmer. Cover and reduce heat to low. Cook for 15 minutes.
  5. Add chicken and pineapple: Return the cooked chicken and pineapple chunks to the pan. Stir gently to combine, then cover and cook for another 5 minutes, or until the rice is tender and the liquid is absorbed.
  6. Garnish and serve: Remove from heat and fluff the rice with a fork. Garnish with green onions and cilantro, and serve hot.
