  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup mini marshmallows
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup maraschino cherries, drained and halved (optional)

Instructions

  1. In a large mixing bowl, combine the crushed pineapple and vanilla pudding mix. Stir until the pudding mix is fully dissolved and the mixture thickens slightly.
  2. Gently fold in the whipped topping until well combined.
  3. Add the mini marshmallows, shredded coconut (if using), and chopped nuts (if using). Mix until evenly distributed.
  4. If desired, gently fold in the maraschino cherries.
  5. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  6. Serve chilled, garnished with extra cherries or a sprinkle of coconut, if desired.
