These Roasted Garlic Idaho Potatoes are perfectly crispy on the outside, fluffy on the inside, and bursting with the flavor of roasted garlic and fresh herbs. They’re an easy side dish that pairs beautifully with any main course!

Ingredients

  • 2 pounds Idaho potatoes, washed and cut into bite-sized chunks
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
  • Optional: 1/4 teaspoon paprika for added color

Instructions

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, combine the potatoes, minced garlic, olive oil, salt, pepper, thyme, and rosemary. Toss until the potatoes are evenly coated.
  • Spread the potatoes out in a single layer on the prepared baking sheet. Make sure they aren’t overcrowded to ensure even roasting.
  • Roast the potatoes in the oven for 25-30 minutes, flipping them halfway through, until they are golden brown and crispy on the outside.
  • Remove from the oven and let cool slightly before serving. Garnish with additional fresh herbs if desired.

Notes

  • For extra crispiness, soak the potato chunks in cold water for 30 minutes before roasting. Dry them thoroughly before seasoning.
  • Feel free to experiment with different seasonings like garlic powder, onion powder, or chili flakes for extra flavor.
