Ingredients

Scale
  • 16 oz cheese tortellini (cooked and cooled)
  • 1 cup salami, chopped or sliced into thin strips
  • 1 cup fresh mozzarella pearls
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper, to taste

Instructions

  • Cook the tortellini: Prepare the cheese tortellini according to the package instructions. Drain and rinse with cold water to stop the cooking process. Set aside to cool.
  • Prepare the salad ingredients: Chop the salami, slice the mozzarella, and cut the vegetables as listed.
  • Combine ingredients: In a large mixing bowl, add the cooked tortellini, salami, mozzarella, cherry tomatoes, olives, red bell pepper, red onion, and parsley.
  • Dress the salad: Pour the Italian dressing over the salad and toss everything gently to coat evenly.
  • Season and chill: Taste and adjust seasoning with salt and pepper. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  • Serve: Serve chilled or at room temperature. Enjoy!

Notes

  • Substitute turkey or ham for salami if desired.
  • For a spicier kick, add a pinch of red pepper flakes.
  • Use whole-grain or spinach tortellini for a healthier twist.
