Ingredients

Scale
  • 4 medium-sized russet potatoes
  • 3 tablespoons olive oil (or melted butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon dried herbs (like thyme, rosemary, or parsley)
  • ½ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and peel the potatoes if desired, then cut them into ¼-inch thick slices.
  3. In a large bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and dried herbs.
  4. Add the potato slices to the bowl and toss until evenly coated with the seasoning mixture.
  5. Arrange the slices in a single layer on the prepared baking sheet. If desired, sprinkle Parmesan cheese on top of the slices.
  6. Bake in the preheated oven for 25–30 minutes, flipping the slices halfway through, until they are golden and crispy.
  7. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

  • For extra crispiness, broil the potatoes for 2–3 minutes at the end of the baking time.
  • Serve with your favorite dipping sauces like sour cream, ranch, or ketchup.
  • Feel free to add chili flakes for a spicier kick!
