  • 2 cups shredded smoked chicken
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1/2 cup Buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup chopped green onions (for garnish)

Instructions

  • Preheat your smoker to 225°F (107°C).
  • In a large mixing bowl, combine the cream cheese, sour cream, ranch dressing, and Buffalo wing sauce until smooth.
  • Fold in the shredded smoked chicken, 1/2 cup of cheddar cheese, 1/2 cup of mozzarella cheese, and blue cheese if using.
  • Transfer the mixture to a cast-iron skillet or a baking dish suitable for smoking. Spread it evenly.
  • Top with the remaining cheddar and mozzarella cheese.
  • Place the skillet in the smoker and cook for 1-1.5 hours until the dip is hot, bubbly, and the cheese is melted.
  • Remove from the smoker, garnish with green onions, and serve warm with your choice of dippers.
