  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional granulated sugar, for rolling

Instructions

  • Prepare the Oven: Preheat to 350°F (175°C). Line baking sheets with parchment paper.
  • Mix Wet Ingredients: In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Form the Dough: Gradually add the dry mixture to the wet mixture, mixing until just combined. Avoid overmixing.
  • Shape the Cookies: Scoop tablespoon-sized portions of dough, roll into balls, and then roll each ball in granulated sugar to coat. Place them on the prepared baking sheets about 2 inches apart.
  • Flatten with Fork: Using a fork, gently press down on each dough ball to create a crisscross pattern.
  • Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly underbaked but will set as they cool.
  • Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
