For the Chicken Skewers:

  • 1 ½ lbs chicken breast, cut into 1-inch cubes
  • 2 jalapeños, finely chopped (seeds removed for less heat, if desired)
  • 3 tbsp honey
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp chili powder
  • Salt and pepper, to taste
  • Wooden or metal skewers

For the Cilantro Lime Dip:

  • ½ cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 small clove garlic, minced
  • 2 tbsp lime juice (about 1 lime)
  • Zest of 1 lime
  • 2 tbsp fresh cilantro, finely chopped
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken:
    In a large bowl, mix honey, soy sauce, olive oil, chopped jalapeños, garlic, smoked paprika, cumin, chili powder, salt, and pepper. Add chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  2. Prepare the Dip:
    In a small bowl, whisk together Greek yogurt, mayonnaise, garlic, lime juice, lime zest, and cilantro. Season with salt and pepper. Cover and refrigerate until ready to serve.
  3. Assemble Skewers:
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread marinated chicken pieces onto skewers, leaving a little space between each piece.
  4. Cook the Skewers:
    Preheat grill or grill pan to medium-high heat. Lightly oil the grates. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  5. Serve:
    Serve skewers hot with the cilantro lime dip on the side. Garnish with extra cilantro or lime wedges if desired.
