Spinach and Mushroom Smothered Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese (or a non-dairy alternative)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth (non-alcoholic)
  • 2 tbsp olive oil
  • 1 tbsp cornstarch (mixed with a little water)

Instructions:

  1. Season chicken breasts with salt, pepper, and dried thyme.
  2. In a skillet, heat olive oil over medium heat. Cook chicken until golden brown. Set aside.
  3. In the same skillet, add chopped onions and minced garlic. Cook until tender.
  4. Add sliced mushrooms to the skillet and cook until soft.
  5. Toss fresh spinach into the skillet and cook until wilted.
  6. Return the cooked chicken to the skillet. Add chicken broth and bring to a simmer.
  7. Mix cornstarch with water and add it to the skillet to thicken the sauce.
  8. Sprinkle shredded mozzarella cheese over the chicken. Cover and cook until the cheese melts.

Notes:

  • For a dairy-free version, substitute mozzarella cheese with a plant-based alternative.
  • Serve the dish with a side of rice or your favorite gluten-free pasta for a complete meal.
