  • 4 cups canned or fresh peaches, peeled and sliced (reserve juice if using canned)
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Peaches:

    • If using fresh peaches, toss them with half the sugar in a bowl and set aside for 10 minutes to release juices.
    • If using canned peaches, drain (reserving a little juice) and mix with half the sugar.
  3. Make the Batter:

    • In a medium bowl, whisk together the flour, baking powder, salt, and remaining sugar.
    • Add milk and vanilla extract, stirring until smooth.
  4. Assemble the Cobbler:

    • Pour the melted butter into a 9×13-inch baking dish.
    • Spread the batter evenly over the butter—do not stir.
    • Arrange the peaches (and juice if desired) on top of the batter. Sprinkle with cinnamon if using.
  5. Bake:

    • Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the batter has risen around the peaches.
  6. Cool and Serve:
