Turtle candies are a delightful combination of crunchy pecans, gooey caramel, and rich chocolate, resembling the shape of a turtle. This homemade version is simple to prepare and makes for a perfect treat or gift.

Ingredients

  • Pecan halves: 2 cups (about 64 pieces)
  • Soft caramels: 11 ounces (approximately 30-35 caramels), unwrapped
  • Heavy cream: 2 tablespoons
  • Semi-sweet chocolate chips: 1 cup
  • Shortening or coconut oil: 1 teaspoon (optional, for smoother chocolate)

Instructions

  1. Prepare the Pecans:
    • Preheat your oven to 350°F (175°C).
    • Arrange the pecan halves in a single layer on a baking sheet.
    • Toast in the preheated oven for 8-10 minutes until fragrant.
    • Allow them to cool completely.
  2. Arrange the Pecans:
    • Line a baking sheet with parchment paper or a silicone baking mat.
    • Group 3 pecan halves together in a Y shape to form the base of each turtle.
  3. Prepare the Caramel:
    • In a microwave-safe bowl, combine the unwrapped caramels and heavy cream.
    • Microwave in 30-second intervals, stirring after each, until melted and smooth.
    • Let the caramel cool slightly to thicken.
  4. Assemble the Turtles:
    • Spoon about 1 tablespoon of the melted caramel over each pecan cluster, ensuring it covers the nuts but still shows around the edges.
    • Allow the caramel to set for about 10-15 minutes at room temperature.
  5. Melt the Chocolate:
    • In a microwave-safe bowl, combine the chocolate chips and shortening or coconut oil (if using).
    • Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  6. Coat with Chocolate:
    • Spoon about 1 tablespoon of melted chocolate over each caramel-covered pecan cluster, covering the caramel completely.
    • If desired, sprinkle a pinch of sea salt on top for added flavor.
  7. Set the Candies:
    • Allow the turtle candies to sit at room temperature or refrigerate them for about 30 minutes until the chocolate is fully set.
  8. Serve and Store:
    • Once set, enjoy the turtle candies at room temperature.
    • Store any leftovers in an airtight container at room temperature for up to 1 week, or in the refrigerator for longer storage.
