Instructions

  1. Prepare the Waffle Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract; mix well.
    • Pour the wet ingredients into the dry ingredients and stir until just combined; the batter may be slightly lumpy.
    • Gently fold in the rainbow sprinkles.
  2. Cook the Waffles:
    • Preheat your waffle iron according to the manufacturer’s instructions.
    • Lightly grease the waffle iron with cooking spray or a small amount of oil.
    • Pour the batter onto the preheated waffle iron, using about 1/2 cup of batter per waffle (adjust based on your waffle iron’s size).
    • Close the lid and cook until the waffles are golden brown and crisp.
    • Remove the waffles and let them cool on a wire rack.
  3. Prepare the Buttercream Frosting:
    • In a medium bowl, beat the softened butter until creamy and smooth.
    • Gradually add the sifted confectioners’ sugar, beating well after each addition.
    • Add the vanilla extract and milk; continue to beat until the frosting is light and fluffy.
  4. Assemble the Waffle Cake:
    • Place one waffle on a serving plate and spread a layer of buttercream frosting on top.
    • Repeat the process, stacking waffles and frosting until all waffles are used.
    • Finish with a layer of frosting on top.
  5. Decorate:
    • Add additional sprinkles on top for decoration.
