Cookies:

  • 1/2 cup powdered sugar

  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (optional, for garnish)

Instructions

  1. Prepare the Dough:
    • In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy.
    • Add the lemon zest, lemon juice, and vanilla extract. Mix well.
    • Gradually stir in the flour and salt until a soft dough forms.
  2. Chill the Dough:
    • Divide the dough into two logs (about 1.5 inches in diameter). Wrap them in plastic wrap and refrigerate for at least 1 hour or until firm.
  3. Bake the Cookies:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Slice the dough into 1/4-inch rounds and place them on the prepared baking sheet.
    • Bake for 10–12 minutes or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
  4. Make the Glaze:
    • In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  5. Glaze the Cookies:
    • Dip the tops of each cooled cookie into the glaze or drizzle the glaze over the cookies using a spoon.
    • Sprinkle with lemon zest for garnish, if desired.
